We create rustic, traditional sausages with coarse ground pork. The Berkshire pork that we use from Maple Shade Farm has excellent fat content that will leave you wanting more. For the 607 CSA, we have created two special varieties featuring ramps that we foraged this spring. One pairs Byebrook Farm Gouda and caraway seeds. The other is a reminder of spring with fennel and garlic. We hope you enjoy.
