Sweet, deliciously pungent, slightly hot with a lovely lingering black pepper after- tone. Comparable to a black garlic and a bit like the best bbq, slow roasted whole garlic cloves preserved in rich tamarind, jaggery and spices. Eat the cloves whole, slice them up onto meats (sausage!), cheese, mac & cheese, chevre, roasted potatoes, pasta, sandwiches and save the sauce for more. Kids love them! ATINA Preserves (herbal jams) are made like an Ayurvedic original medicinal chutney! Whole fruit, root and spice combinations preserved in Jaggery: unrefined dried Sugar cane juice. Typically eatten on ready to eat food, light cooking is possible.
